Ingredients

1 pound beef sirloin, thinly sliced

2 cups fresh spinach, thoroughly washed and dried

1 cup mixed greens (arugula, kale, or any preferred blend)

1 cup fresh cherries, pitted and halved

1/2 cup feta cheese, crumbled

1/4 cup sliced almonds, lightly toasted

1/4 cup red onion, thinly sliced

1/4 cup balsamic vinaigrette or cherry vinaigrette (homemade is encouraged for a personal touch)

Salt and freshly cracked black pepper to taste

Olive oil (for marinating and cooking)

Instructions

Marinate the Beef: In a medium bowl, add the thinly sliced beef sirloin. Drizzle with olive oil, and season generously with salt and pepper. Toss the beef to ensure all pieces are coated in the marinade. Let the beef marinate for a minimum of 20 minutes to enhance the flavor.

Cook the Beef: Heat a skillet over medium-high heat. Once hot, add the marinated beef slices in a single layer (you may need to do this in batches). Cook for about 3-4 minutes until the beef is browned and reaches your desired level of doneness. Once cooked, remove from heat and allow the beef to cool slightly on a plate.

Prepare the Salad Base: In a large salad bowl, combine the fresh spinach and mixed greens. Use your hands or salad tongs to gently toss the greens together, ensuring an even mix.

Add Salad Ingredients: Layer the halved cherries over the mixed greens delicately. Next, arrange the cooked beef slices on top of the cherries. Follow with a scattering of crumbled feta cheese, toasted almonds, and the thinly sliced red onion for added crunch and flavor.

Dress the Salad: Lightly drizzle your choice of balsamic or cherry vinaigrette over the entire salad. Using salad tongs or a large spoon, give the salad a gentle toss to distribute the dressing and ensure that all the ingredients are well-coated.

Serve: Portion the salad into individual bowls. Serve immediately to enjoy the fresh and vibrant flavors, making it a perfect meal for any occasion.
