2 cups fresh broccoli florets

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

4 slices of sourdough bread

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 teaspoon garlic powder

1/4 teaspoon red pepper flakes (optional for heat)

4 tablespoons butter, softened (for grilling)

2 tablespoons mayonnaise (for added creaminess)

Instructions
 

Roast the Broccoli:

    - Begin by preheating your oven to 425°F (220°C).

      - In a mixing bowl, add the broccoli florets and drizzle with the olive oil. Season with salt and freshly ground black pepper, tossing until the florets are evenly coated.

        - Spread the broccoli in a single layer on a baking sheet, ensuring there is some space between the florets for even roasting.

          - Roast in the preheated oven for about 15 minutes, or until the broccoli is tender and has developed a light caramelization. Remove from the oven and allow to cool slightly.

            Prepare the Cheese Mixture:

              - In a medium mixing bowl, combine the shredded sharp cheddar and mozzarella cheeses. Add the garlic powder and red pepper flakes (if you enjoy a bit of heat). Mix thoroughly until well incorporated.

                Assemble the Sandwiches:

                  - Take each slice of sourdough bread and spread a layer of mayonnaise on one side.
