Ingredients

8 oz (225 g) rotini or penne pasta

1 tablespoon olive oil

1 small onion, finely diced

2 cloves garlic, minced

1 red bell pepper, diced

1 cup sliced pepperoni

2 cups marinara sauce

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional for a kick)

1/2 cup grated Parmesan cheese

2 cups shredded mozzarella cheese

1/4 cup fresh basil, chopped (for garnish)

Salt and pepper to taste

Instructions

Preheat the Oven: Set your oven to 375°F (190°C) to preheat while you prepare the dish.

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the rotini or penne pasta and cook according to the package instructions until it reaches an al dente texture. Drain the pasta and set it aside.

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for about 3-4 minutes, stirring occasionally, until it becomes translucent. Next, add the minced garlic and diced red bell pepper, continuing to cook for an additional 2-3 minutes until the pepper is tender.

Combine Ingredients: To the skillet, add the sliced pepperoni, cooked pasta, marinara sauce, Italian seasoning, and red pepper flakes if you like it spicy. Mix everything thoroughly until the pasta is well coated with the sauce. Taste and season with salt and pepper according to your preference.

Layer the Bake: Lightly grease a 9x13-inch (3-liter) baking dish. Spread half of the pasta mixture into the dish in an even layer. Then, sprinkle half of the grated Parmesan cheese followed by one-third of the shredded mozzarella cheese on top. Layer the remaining pasta mixture over this and finish by topping with the remaining mozzarella and Parmesan cheeses.

Bake: Cover the baking dish tightly with aluminum foil to prevent the top from burning. Place it in the preheated oven and bake for 20 minutes. After 20 minutes, carefully remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbling and has formed a golden crust.

Garnish and Serve: Once baked, let the dish cool for a few minutes before serving. Garnish generously with freshly chopped basil for a pop of color and flavor.

Serve your Ultimate Cheesy Pepperoni Pizza Pasta Bake alongside a crisp side salad or warm garlic bread for a complete meal!
