Ingredients

4 boneless, skinless chicken breasts

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and black pepper, to taste

2 cups fresh spinach, stems removed

1 cup cherry tomatoes, halved

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 tablespoon olive oil

1 tablespoon balsamic vinegar

Fresh basil leaves, for garnish

Optional: red pepper flakes, for added spice

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Line a large baking sheet with parchment paper to facilitate easy cleanup after cooking.

Prepare the Chicken: Use paper towels to pat the chicken breasts dry, ensuring they are free of moisture. Place them in the center of the prepared sheet pan. Drizzle the chicken with olive oil and generously season with garlic powder, onion powder, smoked paprika, salt, and pepper. Use your hands to rub the seasonings evenly over each breast, ensuring they are well coated.

Add the Vegetables: In a separate mixing bowl, combine the fresh spinach and halved cherry tomatoes. Drizzle the mixture with balsamic vinegar and season with a pinch of salt and black pepper. Toss the vegetables gently until they’re well coated, then arrange them around the chicken breasts on the sheet pan, creating a colorful backdrop.

Bake the Chicken: Place the sheet pan in the preheated oven. Bake for approximately 20 minutes, or until the chicken's internal temperature reaches 165°F (75°C). This ensures that the chicken is fully cooked and safe to eat.

Add the Cheese: Carefully remove the sheet pan from the oven. Sprinkle a generous amount of shredded mozzarella cheese and grated Parmesan cheese over each chicken breast. Return the sheet pan to the oven and bake for an additional 5-7 minutes, or until the cheese is bubbly and beautifully golden.

Garnish and Serve: Once the baking is complete, remove the sheet pan from the oven and let the dish rest for a few minutes. Garnish with fresh basil leaves and, if desired, sprinkle with red pepper flakes for a touch of heat. Serve hot directly from the pan, allowing everyone to scoop up delicious portions.
