Ingredients

2 ripe mangoes, peeled and diced

1 cup all-purpose flour

1/2 cup granulated sugar

1/4 cup packed brown sugar

1/2 cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/2 teaspoon cayenne pepper (adjust according to heat preference)

1/4 teaspoon salt

Zest of 1 lime

1/4 cup shredded coconut (optional, for garnish)

Fresh mint leaves, for garnish (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease a 9x9-inch baking pan and line it with parchment paper, leaving some overhang for easy removal later.

Prepare the Mangoes: In a medium bowl, take the diced mangoes and mash them gently with a fork or a potato masher. Aim for a slightly chunky texture. Set the mashed mango aside to let its flavor develop.

Mix Dry Ingredients: In a separate large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, ground cinnamon, cayenne pepper, and salt. Ensure all the dry ingredients are well combined.

Combine Wet Ingredients: In a large mixing bowl, combine the melted butter, eggs, vanilla extract, and lime zest. Whisk these ingredients together until the mixture is smooth and creamy.

Incorporate Ingredients: Gradually add the dry ingredient mixture to the wet mixture. Stir gently using a spatula or wooden spoon until just combined. Avoid overmixing. Carefully fold in the mashed mango, ensuring it is evenly distributed throughout the batter.

Bake the Bars: Pour the batter into the prepared baking pan. Use a spatula to smooth the top evenly. If you like, sprinkle shredded coconut evenly over the surface for added texture and flavor.

Bake: Place the baking pan in the preheated oven and bake for 25-30 minutes. The bars are done when the edges turn golden brown and a toothpick inserted into the center comes out clean.

Cool and Cut: Once they are baked, remove the pan from the oven and let it cool for about 10 minutes. Lift the bars out of the pan using the parchment paper, and transfer them to a wire rack to cool completely. Once cooled, cut into squares or rectangles for serving.

Garnish and Serve: For an extra touch, garnish the bars with fresh mint leaves before serving. These spicy mango bars can be enjoyed chilled or at room temperature, making them a delightful treat for any occasion.
