8 oz (227g) cremini mushrooms, cleaned and thinly sliced

1 whole head of garlic

2 tablespoons olive oil, divided

1 tablespoon balsamic vinegar

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and freshly ground black pepper, to taste

4 slices of rustic bread (e.g., sourdough or ciabatta)

1/4 cup grated Parmesan cheese (optional for added richness)

Fresh parsley, finely chopped (for garnish)

Instructions
 

Roast the Garlic:

    - Preheat your oven to 400°F (200°C).

      - Carefully cut the top off the head of garlic, exposing the individual cloves slightly.

        - Drizzle 1 tablespoon of olive oil over the exposed cloves and wrap the entire head in aluminum foil.

          - Place the wrapped garlic in the oven and roast for 30-35 minutes, or until the cloves are soft and have developed a rich, caramelized flavor. Remove from the oven and let it cool slightly before squeezing the cloves into a small bowl to create a creamy paste.

            Sauté the Mushrooms:

              - Heat the remaining tablespoon of olive oil in a large skillet over medium-high heat.

                - Add the sliced cremini mushrooms and sauté them for around 5-7 minutes, stirring occasionally, until they release their moisture and turn golden brown.

                  - Stir in the balsamic vinegar and fresh thyme, then season generously with salt and freshly ground pepper. Cook for an additional 2 minutes, allowing the vinegar to reduce and coat the mushrooms. Remove the skillet from heat.
