Ingredients

For the Salmon Skewers:

1 pound fresh salmon fillet, skinless and boneless

2 tablespoons extra-virgin olive oil

1 tablespoon freshly squeezed lemon juice

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon sea salt

½ teaspoon freshly ground black pepper

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes prior to use)

For the Cherry Salsa:

1 cup ripe fresh cherries, pitted and roughly chopped

½ small red onion, finely diced

1 jalapeño pepper, seeded and minced

2 tablespoons fresh cilantro, chopped

1 tablespoon freshly squeezed lime juice

1 tablespoon honey

Sea salt and freshly ground black pepper to taste

Instructions

Prepare the Salmon:

    - Begin by cutting the salmon fillet into 1-inch cubes and placing them in a large mixing bowl.

      - In a separate bowl, whisk together the extra-virgin olive oil, lemon juice, minced garlic, smoked paprika, sea salt, black pepper, and chopped dill until well combined.

        - Pour the marinade over the cubed salmon, gently tossing to ensure all pieces are evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to develop.

          Make the Cherry Salsa:

            - In a medium-sized bowl, combine the chopped cherries, diced red onion, minced jalapeño, and chopped cilantro.

              - In a small bowl, whisk together the lime juice, honey, and a pinch of sea salt and freshly ground black pepper until the honey dissolves.

                - Pour the dressing over the cherry mixture and stir to incorporate evenly. Set aside to let the flavors meld together while you prepare the skewers.

                  Assemble the Skewers:

                    - Preheat the grill to medium-high heat, ensuring it is well-oiled and clean if using metal skewers.

                      - Thread the marinated salmon cubes onto the skewers, leaving a small gap between each piece to promote even cooking and ensure they don’t stick together.

                        Grill the Skewers:

                          - Place the assembled skewers on the preheated grill and cook for approximately 8-10 minutes. Turn them occasionally with tongs until the salmon turns opaque and flakes easily with a fork.

                            Serve:

                              - After grilling, remove the skewers from the grill and let them rest for a few minutes to retain juiciness. Serve the skewers warm with the sweet cherry salsa drizzled over the top or as a side for dipping.

                                Prep Time, Total Time, Servings:

                                  30 mins | 1 hr | Serves 4

Presentation Tips: For an elegant touch, serve the skewers on a platter garnished with fresh dill sprigs and lime wedges, allowing guests to add an extra splash of citrus if desired. Enjoy!
