1 cup of hummus (store-bought or homemade)

1 medium red bell pepper, thinly sliced into strips

1 medium carrot, julienned (cut into thin matchsticks)

1 small handful of fresh parsley, finely chopped

2 tablespoons of sesame seeds (optional but recommended)

1 tablespoon of extra virgin olive oil

Peel them if desired, then use a vegetable peeler or a mandoline slicer to create long, thin ribbons of cucumber (aim for a thickness of about 1/8-inch). If you prefer spiral shapes, a spiralizer works beautifully!

    Flavor the Hummus: In a mixing bowl, take the hummus and blend in the olive oil. Season with salt and pepper to your liking to enhance the flavor of the filling. Mix until smooth and well combined.
