1/2 cup fresh lemon juice (approximately 3-4 lemons)

Zest from 2 lemons

1/2 cup honey or maple syrup (adjust according to your taste)

1 teaspoon vanilla extract

1/4 teaspoon fine sea salt

Optional toppings: crushed graham crackers, fresh berries, mint leaves, or a drizzle of lemon-infused honey

Prepare the Mixture: In a large mixing bowl, combine the plain Greek yogurt, fresh lemon juice, lemon zest, honey or maple syrup, vanilla extract, and salt. Using a whisk or spoon, stir the mixture vigorously until it becomes smooth and creamy, ensuring all ingredients are well incorporated.

    Taste and Adjust: Before freezing, taste your mixture and tweak it to your liking. If you prefer it sweeter, add additional honey or maple syrup little by little until you achieve the desired sweetness. Remember, the tartness of the lemon will complement the sweetness beautifully.

      Fill the Cups: With the help of a spatula or spoon, evenly fill silicone or paper muffin cups with the yogurt mixture. For a fun twist, you can layer a spoonful of crushed graham cracker at the bottom of each cup to create a delicious cheesecake-like base.
