1 cup wild rice, rinsed and drained

1 tablespoon olive oil

1 medium onion, finely diced

2 cloves garlic, minced

2 cups mushrooms (cremini or button), sliced

2 medium carrots, diced

2 celery stalks, diced

6 cups vegetable broth

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

1 cup heavy cream (or coconut milk for a dairy-free alternative)

Salt and freshly ground black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Wild Rice: In a medium saucepan, combine the rinsed wild rice with 3 cups of water. Bring to a vigorous boil, then reduce the heat to low and cover the pot. Let it simmer for approximately 45 minutes, or until the rice grains have become tender and split open. Once cooked, drain any excess water and set the rice aside.

    Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, stirring occasionally, until the onion becomes translucent. Incorporate the minced garlic, and continue to sauté for an additional minute, allowing the garlic to become fragrant.
