1 cup grated carrots (approximately 2 medium-sized carrots)

1 cup rolled oats

1 cup almond flour

1/2 cup pitted dates, soaked in warm water for 10 minutes

1/4 cup walnuts, roughly chopped

1/4 cup shredded unsweetened coconut

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp sea salt

1 tsp pure vanilla extract

Optional: 1/4 cup maple syrup or honey (for added sweetness)

Extra shredded coconut or crushed walnuts for rolling

Instructions
 

Begin by soaking the pitted dates in warm water for 10 minutes to soften them. Once they are soft, drain and set aside.

    In a food processor, combine the soaked dates and the grated carrots. Pulse the mixture until it transforms into a smooth and creamy consistency.

      Next, add the rolled oats, almond flour, chopped walnuts, shredded coconut, ground cinnamon, nutmeg, sea salt, and vanilla extract into the food processor. If you prefer a sweeter flavor, you can include maple syrup or honey at this point.

        Process the mixture again until all ingredients are fully combined and the mixture becomes sticky. If it appears too dry, add a teaspoon of water or an additional drizzle of maple syrup to achieve a desirable texture.

          Once the mixture resembles a dough, use your hands to take small portions, about one tablespoon each, and roll them into firm balls between your palms.

            For an added texture and flavor, roll each bliss ball in either extra shredded coconut or crushed walnuts until fully coated.

              Arrange the completed bliss balls on a baking sheet lined with parchment paper in a single layer.

                Chill the bliss balls in the refrigerator for at least 30 minutes to allow them to firm up and the flavors to meld. For storage, keep them in an airtight container in the fridge for up to one week, or freeze them for longer-term storage.
